- 2 overripe bananas, mashed
- 1 cup fresh or frozen blackberries
- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 cup Greek yogurt or milk
- 1/4 cup honey or maple syrup
- 1/4 cup olive oil or melted butter
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with liners or grease the cups.
- In a large bowl, whisk together mashed bananas, eggs, Greek yogurt, honey or maple syrup, olive oil, and vanilla extract until smooth.
- In a separate bowl, combine rolled oats, whole wheat flour, all-purpose flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the blackberries, being careful not to overmix.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 20–25 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For a gluten-free version, substitute the flours with oat or almond flour. To make the muffins dairy-free, use almond or oat milk instead of Greek yogurt. You can also add chopped nuts, seeds, or dark chocolate chips for extra flavor and texture.
