Easy Cauliflower Tacos Recipe With Avocado

Smoky, spicy roasted cauliflower tucked into warm tortillas and topped with a creamy avocado crema—these tacos are a vibrant, plant-based twist on a classic favorite.

  • 1 head cauliflower, cut into florets
  • 2 tablespoons avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
  • 1 ripe avocado
  • 1/4 cup vegan yogurt
  • 2 tablespoons fresh lime juice
  • 2 tablespoons chopped fresh cilantro
  • 1/4 teaspoon salt
  • 1 cup shredded red cabbage
  • 1/2 cup pico de gallo
  • Additional toppings: hot sauce, jalapeños, lime wedges

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss cauliflower florets with avocado oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Spread the seasoned cauliflower on the prepared baking sheet and roast for 25 minutes, flipping halfway through, until tender and slightly crispy.
  4. While the cauliflower roasts, prepare the avocado crema by blending the avocado, vegan yogurt, lime juice, cilantro, and salt until smooth. Add water as needed to reach desired consistency.
  5. Warm the corn tortillas in a skillet or microwave until pliable.
  6. Assemble the tacos by placing roasted cauliflower in each tortilla, topping with avocado crema, shredded red cabbage, pico de gallo, and any additional desired toppings.
  7. Serve immediately with lime wedges on the side.

Notes

For added protein, consider adding roasted chickpeas to the tacos. Customize with your favorite toppings like pickled onions or vegan cheese. To make ahead, prepare the cauliflower and avocado crema separately and assemble just before serving.
