- 2 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 2 cups penne pasta
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon Italian seasoning
- Salt and black pepper, to taste
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat and sear the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and slice.
- In the same skillet, add minced garlic and sauté for about 30 seconds. Pour in chicken broth and heavy cream, stirring well. Bring to a gentle simmer.
- Add the Parmesan cheese, stirring until melted and smooth. Toss in the cooked broccoli and pasta.
- Return the sliced chicken to the pan, stir everything together, and cook for an additional 2-3 minutes until heated through. Garnish with fresh parsley if desired. Serve warm.
Notes
Make sure to drain the broccoli well after steaming to avoid a watery sauce. Adjust the creaminess by adding more or less heavy cream to your liking. For extra flavor, add a pinch of red pepper flakes.
