Ingredients

1 lb boneless, skinless chicken breasts or thighs, sliced thin

2 cups broccoli florets

1 red bell pepper, sliced

1 carrot, julienned

1 cup snap peas

1/2 onion, sliced

2 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons honey

2 cloves garlic, minced

1 teaspoon grated ginger

1 tablespoon cornstarch mixed with 2 tablespoons water


Instructions

  1. Slice the chicken and vegetables evenly. Prepare the teriyaki sauce by mixing soy sauce, honey, garlic, ginger, and cornstarch slurry in a bowl.
  2. Heat oil in a large pan over medium-high heat. Cook the chicken until browned and fully cooked. Remove and set aside.
  3. In the same pan, add more oil if needed. Sauté the vegetables for 5-7 minutes until tender-crisp.
  4. Add the chicken back to the pan and pour the teriyaki sauce over everything. Simmer for 2-3 minutes until the sauce thickens.
  5. Serve hot over steamed rice or noodles. Garnish with sesame seeds and green onions.
