  • 1 ½ lbs Petite Gold Potatoes
  • 34 cloves fresh garlic, minced
  • ¼ cup unsalted butter
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese, plus extra for garnish
  • 3 tbsp sour cream
  • Salt and black pepper to taste
  • Optional: Chives for garnish

Instructions

  1. Peel and cut potatoes into even-sized chunks. Place in a large pot, cover with cold water, and add a generous pinch of salt.
  2. Bring to a boil over medium-high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
  3. In a small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.
  4. Drain potatoes and return to the pot. Mash using a potato masher or ricer until smooth.
  5. Stir in the garlic-butter mixture, heavy cream, grated Parmesan, and sour cream. Mix until well combined and creamy.
  6. Season with salt and black pepper to taste.
  7. Transfer to a serving bowl, garnish with additional Parmesan and chopped chives if desired. Serve warm.

Notes

For a lighter version, substitute heavy cream with half-and-half or whole milk. Roasting the garlic before adding can provide a sweeter, milder flavor. Adjust garlic quantity based on personal preference for intensity.
