- 1 ½ lbs Petite Gold Potatoes
- 3–4 cloves fresh garlic, minced
- ¼ cup unsalted butter
- ¼ cup heavy cream
- ¼ cup grated Parmesan cheese, plus extra for garnish
- 3 tbsp sour cream
- Salt and black pepper to taste
- Optional: Chives for garnish
Instructions
- Peel and cut potatoes into even-sized chunks. Place in a large pot, cover with cold water, and add a generous pinch of salt.
- Bring to a boil over medium-high heat, then reduce to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
- In a small saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.
- Drain potatoes and return to the pot. Mash using a potato masher or ricer until smooth.
- Stir in the garlic-butter mixture, heavy cream, grated Parmesan, and sour cream. Mix until well combined and creamy.
- Season with salt and black pepper to taste.
- Transfer to a serving bowl, garnish with additional Parmesan and chopped chives if desired. Serve warm.
Notes
For a lighter version, substitute heavy cream with half-and-half or whole milk. Roasting the garlic before adding can provide a sweeter, milder flavor. Adjust garlic quantity based on personal preference for intensity.
