Herb-Crusted Prime Rib Roast: Perfect Holiday Dinner

  • Author: Amelia M.
  • Total Time: 1 hour 45 minutes to 2 hours 15 minutes (plus marinating time)
  • Yield: 4-6 servings 1x

Description

A succulent prime rib roast seasoned with a flavorful garlic-herb crust, perfect for special occasions and holiday feasts.

Ingredients

Scale
  • 1 (4-5 lb) bone-in prime rib roast
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp kosher salt
  • 1 tsp freshly ground black pepper
  • 2 tbsp Dijon mustard
  • 2 tbsp softened butter
  • 1 tbsp neutral oil (e.g., grapeseed or canola)

Instructions

  1. French the bones of the prime rib roast for presentation and tie with kitchen twine at 2-inch intervals to maintain shape during cooking.
  2. In a bowl, combine minced garlic, chopped rosemary, chopped thyme, kosher salt, black pepper, Dijon mustard, softened butter, and neutral oil to form a paste.
  3. Rub the herb paste evenly over the entire surface of the roast.
  4. Place the seasoned roast on a baking sheet and refrigerate, uncovered, for 12 to 24 hours to allow flavors to meld.
  5. Remove the roast from the refrigerator and let it sit at room temperature for 30 to 60 minutes before cooking.
  6. Preheat the oven to 450°F (230°C).
  7. Place the roast on a rack in a roasting pan, bone-side down.
  8. Roast in the preheated oven for 15 minutes, then reduce the oven temperature to 325°F (165°C).
  9. Continue roasting until the internal temperature reaches 120°F (49°C) for medium-rare or 130°F (54°C) for medium, approximately 1.5 to 2 hours.
  10. Remove the roast from the oven, tent loosely with foil, and let rest for 20 minutes before carving.
  11. Slice and serve with au jus or your preferred sauce.

Notes

For optimal flavor, use a prime-grade roast with good marbling. Letting the roast rest before carving ensures juiciness. Adjust herb quantities to taste.
