- 2 tbsp softened butter

Instructions
- French the bones of the prime rib roast for presentation and tie with kitchen twine at 2-inch intervals to maintain shape during cooking.
- In a bowl, combine minced garlic, chopped rosemary, chopped thyme, kosher salt, black pepper, Dijon mustard, softened butter, and neutral oil to form a paste.
- Rub the herb paste evenly over the entire surface of the roast.
- Place the seasoned roast on a baking sheet and refrigerate, uncovered, for 12 to 24 hours to allow flavors to meld.
- Remove the roast from the refrigerator and let it sit at room temperature for 30 to 60 minutes before cooking.
- Preheat the oven to 450°F (230°C).
- Place the roast on a rack in a roasting pan, bone-side down.
- Roast in the preheated oven for 15 minutes, then reduce the oven temperature to 325°F (165°C).
- Continue roasting until the internal temperature reaches 120°F (49°C) for medium-rare or 130°F (54°C) for medium, approximately 1.5 to 2 hours.
- Remove the roast from the oven, tent loosely with foil, and let rest for 20 minutes before carving.
- Slice and serve with au jus or your preferred sauce.

For optimal flavor, use a prime-grade roast with good marbling. Letting the roast rest before carving ensures juiciness. Adjust herb quantities to taste.
