Ingredients
2 boneless, skinless chicken breasts (diced)
1 cup long-grain rice (rinsed)
1 tablespoon olive oil
3 cloves garlic (minced)
1 small onion (diced)
2 cups chicken broth
1 cup heavy cream
1 cup grated parmesan cheese
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Heat olive oil in a large skillet over medium-high heat. Sear diced chicken for 5-7 minutes until browned. Remove and set aside.
Add garlic and onion to the skillet. Sauté for 2-3 minutes until fragrant.
Stir in the rinsed rice and toast for 2 minutes. Add chicken broth and heavy cream, then return the chicken to the skillet.
Stir in grated parmesan until melted and creamy. Garnish with fresh parsley before serving.
