4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon Italian seasoning

2 tablespoons olive oil
2 cups broccoli florets
1 cup sliced carrots
1 cup cubed potatoes
Instructions
- Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
- In a bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Brush the chicken with olive oil and coat with the Parmesan mixture.
