A classic French-inspired soup combining the creamy texture of starchy potatoes with the delicate, mild flavor of leeks. Perfect for cozy nights or as an elegant starter.

- 4 medium potatoes, peeled and diced
- 3 leeks, white and light green parts only, sliced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream (optional)
- 2 tbsp butter or olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Prepare the leeks by slicing and rinsing thoroughly to remove dirt. Soak in water if needed.
- Heat butter or olive oil in a large pot. Add minced garlic and sauté until fragrant, followed by leeks. Cook until softened, about 5 minutes.
- Stir in diced potatoes and cook for 2-3 minutes to coat with flavors.
- Add broth and bring to a boil. Reduce heat and simmer until potatoes are tender, approximately 15-20 minutes.
- Use an immersion blender to puree the soup until smooth. For a chunkier texture, blend half the soup and leave the rest unblended.
- Stir in heavy cream, if desired, and adjust seasoning with salt and pepper.
- Ladle into bowls and garnish with fresh herbs, croutons, or a drizzle of olive oil before serving.
Notes
For a vegan or dairy-free version, replace butter with olive oil and use coconut milk or almond cream for richness. Incorporate nutritional yeast for a cheesy flavor. To add protein, top with crispy bacon or shredded chicken, or stir in cooked white beans or lentils for a plant-based protein boost. Additional flavors can be infused by including caramelized onions, a pinch of nutmeg or smoked paprika, or fresh spinach or kale for extra nutrients.
