A delicious and healthier take on the classic roast turkey club sandwich, featuring creamy avocado instead of bacon for a rich and nutritious twist.
Ingredients
4 slices whole wheat or sourdough bread
6 ounces roasted turkey breast, sliced
1 medium avocado, sliced or mashed
4 lettuce leaves (romaine or butter lettuce)
1 medium tomato, sliced
2 tablespoons mayonnaise or Greek yogurt
1 teaspoon Dijon mustard (optional)
Salt and pepper to taste
Instructions
- Apply a thin layer of mayonnaise or Greek yogurt on one side of each bread slice. If using mustard, spread a small amount for extra flavor.
- Place avocado slices evenly on two slices of bread. Top with sliced roasted turkey.
- Add fresh lettuce leaves and tomato slices on top of the turkey.
- Place the remaining slices of toasted bread on top and press gently. Cut the sandwich diagonally and serve immediately.
